About Medley

Chefs Wilks and Colleen MedleyMedley is owned and operated by Chefs Wilks and Colleen Medley.   The Chef couple has lived and cooked all over the country developing an expansive knowledge of many different regional flavors and ingredients.  Wilks and Colleen attended the Culinary Institute of America in New York as well as Johnson and Wales University in Rhode Island.  Both chefs were born to small rural towns before hopping around major cities in and out of the U.S. honing their craft.  After living and working in Los Angeles the couple decided to move back and settle here to pursue their passions of cooking and dining in a place they both love.

A word from the Chefs:

Medley is all about what we call “casual fine-dining.” We strive to give the best dining and service experience that our training can offer in a setting that makes people feel at home and comfortable.  Our menus are inspired by all American cuisines as well as some of our favorites from abroad; all having a clear nod to our roots of both New Mexico and New England.  We use as many local, seasonal ingredients as possible creating dishes that bring a sense of the Taos community into our food.  We love to cook. We love to eat. We love to dine. Medley is about bringing all of those things together to create a special place where we can share our passions with you.
